Brisket Flat is a lean cut of beef from the lower chest of a cow. It's also known as the "first cut". Characteristics are (1) Leaner than the point or tip cut, (2) More uniform in shape, (3) Larger than the point cut, and (4) Long and rectangular in shape, and (5) Slices well.
